    Description:
Mrs Lena Pigg (Uncle Elman Clay's mother) gave this recipe to Aunt Lucy, who passed it on to her girls and to Mom (Aunt Bert). Aunt Lucy always brought this cake to the Homecoming. Blackberry cake has become a staple (along with chicken and dumplins, and other favorites) of the Homecoming table. Thanks to Berta, and Lena, and Mom for continuing this tradition.

Ingredients:
cake:
1 cup butter
2 cups sugar
2 cups whole blackberries
1 cup blackberry juice
2 tsp nutmeg
2 tsp vanilla
2 tsp baking soda
2 tsp baking powder
5 whole eggs
4 cups flour

icing:
2 egg-whites, unbeaten (Mom uses the whites from two of the cake recipe eggs).
1 1/2 cups sugar
1/8 tsp salt
1/3 cup cold water
1 tbsp light corn syrup
1 tsp vanilla
1 dozen marshmallow, quartered

Directions:
Cake:

Cream butter and sugar in a large bowl. Sift dry ingredients together in a smaller bowl. Add eggs one at a time alternately with some dry mixture and some juice, into the butter/sugar mixture, beat after each addition. Gently fold in blackberries and bake.
350 degrees for 20 to 30 minutes (check with toothpick). Makes 4 or 5 layers.



Icing:

Place egg whites, sugar, salt, water and corn syrup in top of double boiler. Place over boiling water and beat constantly with a large double rotary beater or electric mixer at high speed until frosting will stand in peaks (about 7 minutes), add marshmallows while beating.

Remove from heat. Beat in vanilla. Quickly spread on cake.

Makes enough frosting for 2 nine inch layer cakes or 2 dozen cupcakes.
